Discover El Brote

Located in the heart of Madrid at C. de la Ruda, 14, Centro, El Brote offers a unique dining experience that brings together a blend of flavors from traditional Spanish cuisine and innovative culinary techniques. Whether you're a local or a tourist exploring the vibrant streets of Madrid, this cozy and charming restaurant offers something for everyone. It’s not just a place to eat; it’s a destination to experience flavorful dishes in a welcoming atmosphere.

As soon as you step into El Brote, the warm, rustic decor creates an inviting ambiance that sets the tone for a memorable meal. The friendly staff are attentive and eager to make sure every guest feels at home. From the moment you sit down, you know you’re in for a treat. The menu at El Brote is a reflection of the restaurant’s philosophy: simple ingredients transformed into complex flavors that feel both familiar and exciting.

One of the highlights of El Brote is its focus on seasonal, locally sourced ingredients. This approach ensures that every dish is fresh, flavorful, and aligned with the rhythms of the Spanish countryside. The menu changes regularly to reflect what’s in season, allowing guests to enjoy a different dining experience with each visit. For example, during the summer months, you might find refreshing gazpachos made with tomatoes picked that very morning, while in winter, the restaurant’s rich stews and slow-cooked meats will warm you from the inside out.

A standout dish at El Brote is their famed grilled octopus. The octopus is perfectly cooked, with a crispy exterior and tender inside, and served with a drizzle of olive oil and a touch of smoky paprika. It’s a dish that captures the essence of Spanish flavors while offering something a little different from the typical Mediterranean seafood offerings. Another must-try is their slow-cooked lamb, which falls off the bone and melts in your mouth. It’s the perfect comfort food that never fails to impress.

But it’s not just the main courses that shine at El Brote; their appetizers are equally noteworthy. From crispy croquetas filled with creamy béchamel to the Spanish tortilla, which is deceptively simple but packed with flavor, each bite is a reminder of how well-executed Spanish food can be. The restaurant also offers a variety of tapas, allowing guests to sample a little bit of everything. Pair these with a selection of fine Spanish wines, and you’re in for a truly authentic experience.

El Brote places a strong emphasis on creating a community environment, with an open kitchen concept that lets diners see the chefs at work. This transparency adds an extra layer of connection to the food, and it’s clear that the kitchen team takes pride in every dish they prepare. The atmosphere is relaxed and unpretentious, making it perfect for a casual dinner with friends or a special occasion.

One thing that truly sets El Brote apart is its commitment to sustainability. The restaurant works closely with local farmers and purveyors to ensure that not only is the food fresh and delicious, but it’s also ethically sourced. This dedication to sustainability extends to the restaurant’s use of biodegradable packaging and a reduced carbon footprint, which is always a bonus for eco-conscious diners.

The location of El Brote is another factor that makes it stand out. Situated in the bustling Centro area of Madrid, it’s the perfect spot to enjoy a meal after a day of exploring the city. Whether you're wandering the nearby Plaza Mayor or soaking in the sights of the Royal Palace, El Brote is just a short walk away, making it a great place to relax and recharge.

If you’re looking for a restaurant that offers delicious food, a welcoming atmosphere, and a taste of authentic Spanish cuisine, El Brote is an excellent choice. Whether you’re here for a casual dinner or a celebratory meal, you’ll leave feeling satisfied, having enjoyed both the food and the experience. With its seasonal menu, commitment to sustainability, and focus on community, El Brote has earned its reputation as a beloved dining spot in Madrid.

  • This mushroom focussed restaurant is more than just that! From the moment you walk in, you’re warmly welcomed. The service staff knows the menu well and takes you through each course that is served. From the palate cleanser we started to the dessert, everything was brilliant - including the wines. If there is one wish for this place, I wish that the chefs go bold(er) and make the mushrooms more heroic in their dishes. I’ll definitely go back here! A recommended experience in Madrid.

  • My wife and I spent a week in Madrid and had many fine meals during our visit but our six course experience at El Brote was by far the very best. The seasonal mushroom based menu offered an amazing experience and our waiter, Miguel, was knowledgeable, friendly and provided outstanding service.

  • Great rec from a friend, glad we went! We are an annoying group of three (vegan, vegetarian with a mild allergy, omnivore) but they handled the whole meal with grace such that no one felt left out. Each of the five dishes was shared, with potential side additions given dietary limitations (e.g., one person got squid and two got breaded/fried veg, or two people got crushed peanuts and one got spiced seed/crouton mix). Highlights were definitely the two trumpet mushroom courses (black and yellow), but loved the flavor of each and how they were unique without being weird for the sake of being weird. Felt full without being stuffed, price very reasonable for the service of the food.

  • Absolutely outstanding! This small restaurant tucked away from the main busy streets is a gem, all based on seasonal mushroom. There is a single fixed price menu composed of five different dishes to share. Each is based on a different seasonal mushroom and full in flavor, associated with diverse veggies or meat/fish. The waiter comes and explain each dish to présent the mushroom. We had morels shiitake and chanterelles among others.the meal was nicely rounded with a jasmine gelato. In short it was all perfect. It’s pricey and portions are not big but that is totally worth it

  • Just amazing selection of wild, rare, exotic mushrooms prepared in many different ways.. I'd give it 10 Stars instead of 5 if Google let me. The food was amazing, and the service was over the top in a very quaint and cozy space. I will be back again!!! Thank you for such an incredible experience.

  • Amazing place in the middle of the city center with simple, yet delicious food. The mushrooms are all prepared perfectly, and the accompanying ingredients are equally good. They have a single menu, which makes everything super easy. The service is incredible, friendly, knowledgeable and attentive!!

  • The dinning experience was delightful. The flavors were unique. Its also super interesting as every dish was presented by the Dining attendant explaining the mushrooms used with a proper mushroom toy. Its super worth the experience and the food of course. We were very happy with our dinner date.
